Apex was founded by a working cook whose appreciation for good kitchen knives grew into a serious pursuit of hand sharpening, knife repair, and restoration.

Each knife is inspected, professionally sharpened at an appropriate angle, carefully deburred, and individually tested before return.

The goal is straightforward: careful work, sound judgment, and a result suited to the knife in front of us.

RESTORATION WITH JUDGMENT

Some knives should come back looking nearly new. Others have earned their history.

Apex preserves character, maker’s marks, geometry, and meaningful signs of age when appropriate, rather than automatically grinding every older knife into a flawless-looking new object. When a full cosmetic makeover is appropriate and desired, that result can be pursued as well.
